This weekend, our chef Devon whipped up an Island Stories special – a light pancake filled with poached exotic fruits and berries, topped with mangos, a papaya compote, toasted coconut flakes and Malibu honey cream. Especially perfect for Pancake Day!

Banana and Rum Topping
A Pancake Day recipe to be kept away from the kids – top your sweet creations with this truly Caribbean fusion of rum and bananas.
At the heart of Caribbean culture, and particularly cuisine, you will find bananas. Travelling through the many Caribbean islands you will see bananas, cocoa and citrus trees growing by the roadsides, and in almost every Caribbean restaurant you will spot the iconic yellow fruit on the menu.
For this pancake topping, take your bananas and chop them up into thin slices. The slices can be placed into the uncooked batter of your pancakes or on top of the pancake itself before being drizzled in rum.
Incorporating mango fruit to the topping of your pancake is healthy alternative to sprinkling lemon and sugar. Blitz slices of mango and bananas in a blender before you mix it into your pancake mix, or for a more obvious flavour lay the mango slices on top of your pancake with some golden syrup.
Coconut and Pomegranate Topping
For those who want to go the whole mile and try something completely different, you need to try our coconut and pomegranate toppings. Mix up your traditional pancake mix but remember to add desiccated coconut into the batter for an extra hint of flavour! And if you prefer something sweet, mix your pomegranate seeds into a spoonful of natural yoghurt to complete your pancakes.
