The history of Caribbean culture
The flavours of the Caribbean were founded simply by the local women in their kitchens, working to be as creative as possible with the little they had at hand. They often had a small variety of ingredients to work with and needed to be producing meals on a regular basis throughout the day. With a little bit of this and a little bit of that the Caribbean flavours were produced in the need to be flexible in their creativity.
Today the produce used in Caribbean cuisine is now exported to North America and Europe. The mixture of products includes vegetables like: plantains, avocados, roots, yams, yucca, ginger and sweet potatoes. Other produce like fruit are also sent over, these include: papayas, mangoes, bananas, pineapples, passion fruits, guavas, coconuts and limes.
The Caribbean produce
The essence of Caribbean cooking is found mainly in the use of fresh foods which are then enhanced by a mixture of spices and herbs. Each region of the Caribbean is home to different offerings in dishes and specialties. For example, Jamaica is known for the most flavourful coffee beans that can be found within the mountains. Coastal areas of the Caribbean are home to the coconut trees, while the lowlands provide sweet pineapples. The Caribbean offers something for everyone.
Ingredients that are most commonly used in the islands’ dishes include a mixture of rice, plantains, beans, cassava, cilantro, chickpeas, sweet potato and hints of coconut. Combining these flavours with locally produced meat such as beef pork and fish will create those signature Caribbean favourites.
By using ingredients such as garlic, onions, and celery with a mixture of herbs like cilantro, marjoram and rosemary you can create a green herb and oil based marinade perfect for injecting that quintessentially Caribbean character. It will compliment a variety of dishes including curries stews and roasted meats.
